Our Chef, Julien Pilati, hails from the Champagne region and has worked alongside renowned chefs such as Alain Ducasse, Hélène Darroze, Arnaud Lallemant, and Michel Sarran. His wife, Laetitia, is from Brittany.
Our cuisine draws inspiration from both our native regions and local culinary traditions. Our menus feature only seasonal, organic, and predominantly local products, sourced exclusively from French farms, livestock, and fisheries.
Through our producers, nature sets the pace. This is our commitment to healthy and sustainable gastronomy, an approach recognized by the FiG Table Eco-Responsible and Green Key labels.
